Les Rochforts is the oldest plot of Chardonnay that Antoine Bouvet farms, planted in 1958; very chalky section of Bisseil, in the coeur de terroir. Pressed at Antoine Bouvet according to his press cycle using a vertical Coquard basket press. The juice is collected by Champagne Cose without sedimentation and without SO2 and brought back to the winery in Chouilly. The must goes directly
